The temperate maritime climate of the Margaret River region produces Sauvignon Blanc of varietal purity and exactness. Enticing scents of ripe nectarines, gooseberries, freshly pressed citrus oils and blackcurrant are laced with hints of dusky peach fuzz, honeysuckle and savoury lemon/nettle herbs. The palate is a cascade of citrus zest, fleshy stone fruits and passion-fruit pulp. A few moments in oak provides a toasty lemon-butter richness, while the fine mineral and chalk-like acidity offers a sense of balance to finish. Try with grilled Blue Bone Groper fillets.
